The shop has been open for nearly four years, and my two favorite things about it are:

- Test Bake Thursday
Like many Cookie of the Month (COTM) creations, this cookie started with a Test Bake. Our test bakes are typically inspired by an idea or inventory, and this one was a bit of both. We're working on cookie flavors for all the MBTA lines, which we find incredibly fun. Since we don't love using food coloring, creating red, blue, orange, and green cookies has been challenging.
We began experimenting with the Blue Line, crafting a blueberry ginger cookie that's awesome - its blue color comes naturally from blueberry puree. This sparked our creativity. Next door is PS Gourmet Coffee, which offers various iced coffees and drinks. I occasionally enjoy a raspberry lime rickey, which inspired a raspberry lime cookie we sent out last summer.
During one Test Bake Thursday, we were short on supplies but had extra raspberries and chocolate chips. We improvised a raspberry chip cookie and absolutely loved it. After continued refinement, the cookie is now ready!
It had been a while since I created a Boston-inspired name, so I asked AI for help. After receiving some terrible suggestions, I pieced together "Back Bay Berry Bliss". I'm now on the hunt for more Boston neighborhood cookie names!
**Cookie Details:**
We start with unsalted butter and granulated sugar and we cream that till it's ready to go, add in cage free eggs and raspberry puree, then our King Arthur Flour (it's the BEST) and our leveners along with some kosher salt to balance the sweet. Then we load in the semi sweet chocolate chips. The dough is hand scooped and rolled in sugar and baked to perfect. This pink cookie made us thing of Valentines Day.
