April 2025 Cookie of the Month: What's Up Doc?

 

When I first dreamed of opening a cookie shop, I knew I wanted to create new flavors all the time. This creative streak often drives our bakery manager a little nuts (sorry, not sorry), but it’s all part of the fun. Some ideas are hits, some are misses, and some are born out of necessity—like using up ingredients before they expire. But every Thursday (unless it’s Christmas madness), we test bake something new.  

And that’s how What’s Up Doc? came to life. It was February 3rd—National Carrot Cake Day—and a Thursday. The stars aligned, and I thought, "Why not make a carrot cake cookie?" We had been experimenting with this rich, dark brown sugar dough that I was obsessed with, so we used it as the base. Then came fresh shredded carrots, ginger, cinnamon, and a handful of white chocolate chips to mimic cream cheese frosting.  

The name? That was easy. Bugs Bunny was one of my favorite childhood characters, and “Ehhhhh… What’s Up Doc?” always takes me back to watching cartoons with my dad. My dad isn’t even much of a cookie guy, but he’s my biggest fan when it comes to Top Shelf Cookies. When I first floated the idea of leaving my cubicle job to bake cookies full-time, I half-expected him to tell me to “get real.” Instead, he told me to go for it—and kept reminding me when I hesitated. Naming this cookie is my little nod to him.  

Turns out, What’s Up Doc? was an instant hit—it became our fastest test bake sellout ever! So we knew we had something special on our hands. We got labels designed and printed and decided to make it March’s Cookie of the Month that year
